I have an order this weekend for a vanilla cake with strawberry filling, this is the first time i will be doing this combination for any of my client as (i am still new to cake business). I just don't know what recipe i should follow for the vanilla cake... should i go for a vanilla sponge or any other recipes... for the strawberry filling i will be following wilton's recipe posted on their website:

Has any one tried it ever... should i go for it? please i need help with this... and also if the client just asked for these things then does it mean i cannot use buttercream for the frosting... as i have to cover it with fondant and until i cover it with nice buttercream frosting.. the fondant will not appear in a good shape... please any help, advise or suggestions will be of great help....

I haven't used this filling, but just from reading the recipe, you might run the risk of the strawberries oozing juice after the filling is made. I assume you want to put it between two layers of cake rather than cutting into the cake to put the filling in, like it is in the photo that goes with the recipe. If so, just make sure you have a really good buttercream dam around the outside - the buttercream should be so thick you can roll it into a snake with your hands and then put it around the edge of the bottom layer. Then put the top layer on and leave it for a few hours (with a weight, like a large dinner plate or a clean floor tile on top, if possible). After that you can crumbcoat it with your buttercream (yes, you'll need buttercream for the dam and the crumbcoat, even if your customer didn't specify it - it's the glue that holds the cake together) and then cover it with the fondant. It sounds delicious, by the way.
