Anyone have tried tested and true vegan cake recipes? I need to make an engagement cake and it needs to be vegan.

To be honest I have only ever made one vegan cake and it was vanilla. So I am not really sure what flavours are possible.
Can you suggest your favorites maybe. Or a chocolate hazelnut one.

My most popular are vanilla, deep chocolate and pumpkin spice. You could add any flavor extract to the vanilla or chocolate to give it some zip. Also, please be sure your sugar is organic. I use raw sugar to avoid the bone -char refining, but organic sugar is ok to use also.
Adjust the recipes and cook times to suit the size of your pan.

Vanilla Vegan Cake
1 1/2 cups unbleached all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegetable oil
1 cup soymilk
1 tablespoon vanilla extract
1 tablespoon vinegar

Heat oven to 350°F
Line 8-inch round or square cake pan with parchment paper and grease sides of the pan. Then flour the pan.
Whisk together flour, sugar, baking soda, and salt.
Add vegetable oil, soy milk, and vanilla extract; whisk until no lumps appear and batter is smooth.
Add vinegar, stir until just blended, and quickly pour into pan.
Bake around 30 minutes, until cake begins to pull away from sides and/or toothpick inserted in the center pulls out clean.
Let sit for ten to fifteen minutes, invert, and cool on rack.

Deep Chocolate Vegan Cake

1 1/2 cups white flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water or 1 cup chilled brewed coffee
2 teaspoons vanilla extract
2 tablespoons cider vinegar

Preheat oven to 375.

grease a 8" square or round pan and dust with sifted cocoa.
Sift flour, cocoa, soda, salt and sugar.
In another bowl mix oil, water and vanilla.
Pour liquid into dry and mix until smooth.
Add vinegar and stir until just blended.
Immediately pour batter into pan and bake 25-30 minutes.
( a Moosewood recipe )

Pumpkin Spice Cake
1 1/2 cups whole wheat pastry flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons pumpkin pie spice or allspice
1/2 teaspoon ginger
1 cup pumpkin I use fresh but canned is ok
1/4 cup orange juice
1/4 cup soymilk  
1/2 cup vegan butter melted. I use earth balance

Preheat oven to 350 degrees. Grease two round baking pans.
Combine pumpkin, spices, sugar, melted butter, soy milk and orange juice.
Mix in flour, baking soda and powder, and salt.
Pour mixture into the two prepared baking pans and bake for approximately 35 minutes at 350 degrees.

How vegan is vegan ?

Over half of the cane refineries in the United States use bone char (charcoal made from animal bones) as their activated carbon source. In those circumstances, some vegan deem the cane sugar as contaminated by animal product.

That is true. I have been vegan for 20 years and have use turbinado sugar, and organic cane sugar. Both are bone - char free and work great in all my cakes.

In the chocolate cake recipe...when you refer to White Flour...is that a specific type (I'm use to Cake, Pastry, Wheat and AP Flour).

Thanks so much for this info!! I make cakes and am having a hard time finding eggless, milkless cakes.  But your vegan cakes are perfect! Gonna make some tonight. :)

hi. I tried to make the vanilla cake just now. it stuck badly to the grease paper...i had to cut the grease paper off and that hasnt happened before. the cake also tasted odd, not sure if it was the baking soda or the salt that i was tasting. i put coconut flavouring and coconut flakes into the batter like i would with a plain cake but it just came out wring. can you advise me of what im doing wrong please. i need a vegan coconut cake as the groom has allergies but the cake should look and taste normal because everyone else eats omni. i really need the help.

 

ive tried dozens of plain cake recipes that are vegan and my family refuses to eat them.
