Can it be refrigerated?

Also can I color the merengue buttercream and still keep the same consistency? its my first time making this buttercream for 100 cupcakes and I wanted to know if coloring it orange/purple would damage the consistency of it.

Thank you!

Use your gel colors to color. Are you asking if you can refrigerate the batch of smbc? I freeze batches. Then you have to let it come to room temp. and then , I just take my spatula and rebeat it in the bowl. Some put back in the mixer to rebeat. Did i help you ? I do the same if i just put it in the fridge.

Swiss Meringue Buttercream can go in the fridge. I have used some up to 3 weeks old without a problem. If frozen it can last a few months easy.

I do re-beat mind using a paddle at a very low speed (to ensure that not too much air get incorporated) until smooth.
