I am making cupcakes for a Halloween event on Saturday, for both kids and adults, I am trying to find a simple, yet delicious and clean looking buttercream recipe, there is a Vanilla Meringue BC recipe here on cake central that sounds delicious! I never made meringue BC, will this be stiff and clean, and is it very difficult to make? I am open to other suggestions
I use Swiss Merinigue Butter Cream all the time. It is really easy to make.
You have to cook egg whites and sugar together and then beat it until it has stiff peaks and add your butter.
The thing I like about this frosting, is that it is not too sweet and when you flavor it, any flavor will do, it takes the flavor really well. I tends to be soft, so I don't know if that is what you want.
I use loranns flavorings.
The recipe is all over the internet. Just google it. There are many different versions of the recipe, mine works for me. Hope you find one that works for you.
My favorite buttercream is so simple to make....
it's equal parts butter and sugar
I use 2 sticks sweet cream butter and 2 sticks salted or unsalted butter
a bag of sugar (I don't sift mine...dump straight from the bag and it works for me)
1/3 french vanilla reduced fat coffee creamer (liquid)
2 tbls vanilla
I cream my butter with vanilla and then add my sugar and liquid slowly.
sometimes I don't use all the liquid...it just depends on how thick I want my icing...
if it's too sweet when your finished try squeezing some fresh orange juice into the icing...you won't need much..its great for cutting the sweetness and it doesn't change the flavor at all!
