Here is the recipe that I use for white chocolate butter cream. It is very good. I do not remember where I got it from, so if anyone recognizes it please let me know so I can give credit where it is due.
Ingredients:
1 cup butter, softened (no subs)
6 oz white chocolate, melted and cooled
2 cups powdered sugar
3-5 tbsp whipping cream or half-and-half
Directions:
In a large bowl, beat the butter and confectioners sugar at low speed until fluffy.
Add in melted and cooled white chocolate and whipping cream (start with 3 tablespoons and add in more to achieve desired consistency).
Beat on high speed for 3-4 minutes, scraping the bowl with a spatula.
Just add it to taste in any of the European buttercreams.
Barely melt it. I go 15 second intervals for white. Let it come close to room temp again, but still pourable.
