I red velvet cake stable enough to carve?

It depends on the recipe. I use the WASC recipe by macsmom (minus the pudding), and it works great for me. I made the tractor in my photos with it.

i use a scratch recipe and i am going to pray it will work

I doubt it, unless it is a WASC version. They are usually so crumbly. But good luck to you!

Whatever recipe you decide to go with, carve it frozen, it will help it hold together.
