What is the best way to color white cholate? Will Wilton gel work? Also should I wait for the chocolate to cool before adding color? TIA!

You need to use an oil-based color. Add it to the warm melted chocolate. If it thickens up immediately, your color is water or alcohol based and you'll need to add parafin crystals or crisco to thin it down again.

You can add coloring to the melted chocolate. Or knead it into the modelling chocolate if you need different colors.

I've used the liquid McCormick food coloring from the grocery store and it worked fine, but I didn't need deep colors.
