a girl gave me a recipe for a cake that had no oil and several tablespoons of almond extract and coconut extract I lost the recipe and now she wants me to make it for her again! Does anyone have a recipe like that or at least a recipe that has no oil and no oil substitutes? It was just a cake mix water and eggs but I don't remember how many eggs. And it had like 2 or 3 T of almond extract and 1 or 2 T of coconut extract. The cupcakes are due today so I am in a little bit of a panic!

Sure. You can use any cake mix (except 'butter recipe' mixes) w/o oil. I do it all the time.
I love almond flavoring and use it a lot but......3 Tablespoons of it is a lot!
My usual cake recipe is:
1 Betty Crocker mix (any flavor)
1 1/3 cup water (I use a Pryax 1 cup measuring cup and fill it to the brim - which is over 1 cup but not exactly sure if it is 1/3 cup over)
2 whole eggs (Yes, even for white cake mixes I use whole eggs).
That's it Mix and bake as usual. If you want to add the flavoring go ahead - it wont change the 'recipe' any.
