HELP!
I have to make about 5 inch white chocolate panels for a wedding cake and I can't seem to get the panels to be smooth on one side.
I'm using these plastic cutting boards which are completely smooth but once i pull the chocolate panels up after they are completely cooled they leave residual chocolate on the board so the panels have a rough texture.
Is there anything I can spray or use so that the chocolate will come off smoother?

I'd try a different surface--say acetate, waxed paper or that clear heavy gauge upholstery vinyl.

Martha stewart weddings has a DIY cake with white choc panels and it gives the instructions for making them. You should be able to find it on her site.
