I made cupcakes tonight and some SMBC. I have some left over and want to know how to preserve it. I'm leaving for vacation on Thursday, so I won't be using it any time soon. Can anyone tell me if I can freeze this, without it breaking down when it's thawed? thank you.

I've frozen mine with no adverse effects.

I make large batches a freeze all the time. Just allow it to come to room temperature before rebeating. If it does break, just let it warm up a bit and then beat again, it will come back to life!
