How do I bake a cake that is almost level. My cakes always have a dome, any way of avoiding this?

1. Turn the oven temp down to no more than 325. I bake in convection at 310.
2. As soon as your cakes come out of the oven, use a sheet pan to press down on the cake so that the sheet pan is level with the top of the cake pan. This doesn't *exactly* level the cake, but it does make a more compressed texture. I really like the end result.
3. Buy an Agbay to level and torte (with the double blade) in one quick cut. It's fab!!

I second what Leah said, especially abuot the Agbay!! Just bought one and I am in heaven.
