I make Buddy Valastro's (cake boss) vanilla cake recipe. The texture and mouthfeel are great but the recipe does not rise to a full 2 inches. I tried different 9x13 pans but still does not give me height.
These are the proportions, if it helps...
2 1⁄2 cups cake flour, 2 cups sugar, 3⁄4 cup vegetable oil, 2 1⁄4 teaspoons baking powder, 1 teaspoon pure vanilla extract, 1⁄2 teaspoon fine sea salt,
4 extra-large eggs, at room temperature, 1 cup whole milk
The recipe says it yields 2- 9 inch cakes or 24 cupcakes.
Can anyone please help me?? TIA!!
Did the recipe yield at least 7 cups of batter:
Just put more batter in the pan.
Ditto what Leah said. Recipes says it makes 2- 9 inch pans. This equals about 5-6 cups of batter. A 9x13x2 inch pan requires about 7 cups of batter. Add more batter to the pan.
Thanks so much! So should I make the recipe 1.5 times? I really appreciate you guys' fast response
Yes, make an additional half recipe. Are you making it with the custard?
No.. I am not adding the custard as it is dense anyway. Thanks for the responses!!
