Well, I finally did it, and after 2 failed tries, I have made my first successful batch of chocolate ganache! Trouble is, now I have a ton left over, and I'm just wondering how to store it? With this recipe, I did not refridgerate it at all, which was the problem I had the first 2 times, so now I'm scared to put it in the fridge! Any help would be appreciated! Thank you!

I have froze mine in an airtight container, and when i want to use it again i just let it come to room temperature when i want to use it. When i freeze it i put saran wrap right on top of it so i don't get ice crystals, then put the top on and freeze.. HTH...

Ganache keeps in the fridge for a few days or months in the freezer. Make sure to wrap well.
