How do I add the mint flavor? Should I add it while the chocolates are melting or to the creme? Can I tent it green?

I've never tried it, but if you add it to your melted chocolate I'm sure it would seize. Your best bet would be to add the flavor and color to the cream, IMO.

I'm curious to hear how it turns out. Sounds really good!

If you use lorann flavoring oils that are for candy you should be ok with adding to either one. The Lorann oils are for candy flavoring. I know that the cake store that I uses carrys a creme de menthe in Loranns as I have seen it. I think that have other mint flavoring also. I would use the americolor gels if you want to color your mint white chocolate. I would add it to the cream though as I am not as sure about those. I think that you could use the paste too, the gel colors would just blend in faster, I think. Best wishes. Let us know how it turns out.
