Hi everyone HELP,
I have a wedding cake due on the 16th and it is red with black scroll work.
I would like to make it ahead and freeze the cake. would you do the scroll work after it defrosts or would you do everything and then freeze the cake?
I wanted to do the scroll work in black royal but I have a hard time getting black royal as much as I need. It is more of a gray. But I don't have any problem with black buttercream. I start with dark chocolate frosting and then add black and it pipes fine.
How would anyone suggest I do this cake.. and how far ahead? Please help

Wait to do the scroll work. The black will most likely bleed all over the red cake while it is defrosting. Black royal icing requires A LOT of black gel coloring. I just did one last week, not scroll work but fishnet type lace. The royal is much easier to clean up a mistake, just wait 'til it dries and it scrapes right off without a stain. hth
