I volunteer for our school's breakfast program. Once a week I bring in baking and am looking for ideas of whatI could make. So far I've been making muffins, cheese buns, cinnamon buns and chocolate chip pancakes. I need 9 - 10 dozen of whatever I make so I am looking for recipes that are fairly inexpensive. It also has to be something that I can make the day before and will still taste good or something that won't take too long to make in the morning. Thanks for any help.

Quiche is cheap and great served at room temp, pigs in a blanket (lil smokies wrapped in biscuit dough) are also good room temp, homemade granola over yogurt/fruit

Fruit parfaits. You can assemble them in plastic cups the night before except for the granola on top. Frozen fruit is fine.

Flapjacks, fruit crumble style traybake - something like this I'm sure you could use frozen berries
