How is the easiest way to make ice cubes out of sugar? I am making my son a cake for his 21st birthday that resembles a cooler. Thank you in advance. T

I use half corn syrup and half sugar, heat to the hard candy stage and then pour over some non stick foil you have crumpled up and straighted out a little...

I poured boiled sugar into silicone ice cube trays. I filled only half way to get thinner chips. I tried the 50/50 ratio at first and had problems with spotting. I was told a 1:3 ratio corn sryup/sugar would be better (and it was).

This is the recipe I used (Boiled to 29icon_cool.gif. I took much longer to boil to temp but worked out well.
2 cups water
1 cup corn syrup
3 1/2 cups sugar
1/4 tsp. cream of tartar (added at 280)

I am assuming that you would need to stir this constantly?

Need help - I cannot keep this sugar from turning brown. I am using a stainless steel pot, should I use a non stick pot? Two batches ruined as we speak.
