I have been having a really big problem with my cakes coming out too dense! I have been VERY careful not to overmix, so I wonder if I'm doing something else wrong. I always sift the flour, and I've tried separating the eggs and whipping the egg whites before adding also. Didn't seem to help much. I have been told my cakes are really good except for being way too dense. Any suggestions??

Are you putting too much batter in the pan?? I mistakenly dud that once and my normally fluffy cake became a brick!!

Have you tried cake flour? And do you weigh your flour? I seem to put in too much flour if I use measuring cups, so I always go by weight.
