I'm doing a cake for this weekend with a strawberry filling. The filling is made with fresh strawberry's & a strawberry pie gel. The only that that's cold is the strawberry's. Does anyone know if I would have to refrigerated my cakes with the filling? I was thinking about filling my cake Thursday & the party's Sat.. THANKS EVERYONE!!

Fresh strawberries in anything makes that thing perishable and that equals refrigeration.

Also be aware that the cut strawberries will weep juice and severely thin your pie filling. The weeping will increase the longer the cake is assembled and this will create a big problem--not MAY, but WILL.

I strongly suggest assembling this cake as close to serving as possible.

Another option would be to cook the strawberries and make a preserve like filling.
