Help Smoothing Ganache

Hi

Today I iced my first all ganache cake and I am really happy with the sides and crisp top edge. The sides are perfect glassy smooth but I have tried hot knifing the top and it just won't smooth out. It isnt bumpy but the knife seems to be making the ganache look grainy. Any tips on getting a glassy smooth finish? Thanks

Hmmm..don't know why it's making the ganache 'grainy'...could it be that the layer of ganache on top is thin and that cake crumbs have gotten into the ganache layer? You could add a bit more ganache to the top, and try smoothing that out, see if you get on better second time around (unfortunately that will mess with your nice crisp top edge though & you'll have to smooth around the outside again to get it back)
