I make a nice carrot cake recipe that I want to make cupcakes from. They turn out nice but very dense and I want more of a muffin type cupcake. Is there something that I can increase or decrease to get it to rise more?
There was a hint floating around here someplace recently (don't ask me where) where the cupcake baker preheated the oven to 400 degrees and baked at 400 for 5 minutes, then reduced the temp to 350 and said she got beautifully rounded domes on the cupcakes. Hope that helps!
