Assembling Wedding Cake

I have a 4 tier Wedding Italian Creme Cake with Creme cheese icing due this weekend. How early is too early to torte (4 layers) fill, and ice/crumb coat this cake. I do have refrigeration available

As long as you can chill it you probably can do it by Wed or Thurs.

For my larger cakes due on Sat's, I always bake on Wed, just keep it wrapped really well and in the frig. icon_smile.gif

Yep, Me too. Bake Wed,. Fill,crumb Thurs., Friday icing and decorate.
