Hi, I am making a cake with a bavarian cream filling and it is going to be covered in fondant. My question is do I use a buttercream to dirty ice it? or do I use the same bavarian cream filling? I guess I am most concerned about how it would taste with two different frostings and which would hold up best.

Any input will be GREATLY appreciated!

thanks!

I would not use the bavarian cream to "dirty" ice the cake you need to use buttercream to ice the cake. I would also put a dam around the outer edges of the cake where you are adding your filling.

OK thank you SO much! thats what I figured but I wasnt too sure. Makes sense about creating a dam too. Thank you!

Since the cake is filled with bavarian cream, you could also use Ganache under the fondant instead of buttercream.

ooooh, that sounds great! I am putting a layer of ganache on the cake before the bavarian cream layer so that sounds like a great idea. Thank you!
