I had a request to make a 3D car cake in chocolate, with no dairy. I am not sure whether to take this on, since all of the vegan cakes I have made were difficult to torte, much less carve. Does anyone have a recipe or idea on this?

Vegan means no animal products - no milk, no eggs, only sugar certified as vegan.

Your customer has specified "no dairy".

Use rice milk, soy milk, coconut milk, juice, black coffee or just water for dairy milk.

For butter, use dairy-free margaines [like Nuttelex - check the supermarket]

We use Earth Balance vegan buttery sticks for all our dairy-free cakes, you can find them at Whole Foods.

I make a mudcake with coconut milk and non dairy margarine in this instance. I find the coconut milk makes it lovely and moist .

Sorry, she did actually specify vegan (so no eggs in addition to no dairy, as her son is allergic to both), but I will definitely get some Earth Balance for the icing. Thanks everyone.
