We have the opportunity to get our products in a few local stores . . . This is a first experience for us, and I am trying to set up a game plan, as we will be in charge of monitoring inventory, restocking, and getting rid of old items.
We focus on fresh, natural ingredients . . no mixes, no chemicals, no preservatives. We make cookies, and cupcakes and cakes.
If a buttercream cupcake sits boxed (example: 4 pack) on a non cooled shelf, how long will it stay fresh? One day? 2?

Should we be coming each day and throwing out yesterdays product? We want our customers to have fresh items, but we don't want to throw out good food either.
