My red fondant comes out sticky or too dry. Either way it falls apart. Any suggestions?

What recipe type do you use and what type of food coloring do you use?
If you are using Wilton's or gel color, they have glycerin in them. This makes the fondant softer, so you should mix a little of color and then some powdered sugar. Mix in enough powdered sugar to bring the fondant back to normal, then add more color.
One of my favorite blogs also suggests kneading in some red candy melts to give you a base red without getting too sticky by food coloring.
