Just got a new oven and it is convection. This is likely a really dumb question but do you bake cakes with it on convection or not??

If you have a high/low fan bake with the fan on low and lower the temp by about 25 degrees and you should be fine.

Is it best to bake with the convection on or off though? Which does a better job?

I don't like to bake cakes with the fan on. But I suggest you do a side-by-side comparison which can help you decide which YOU prefer. Make a double batch of cake batter, then bake one cake with convection on and one without the fan.

I always bake with the fan on but on low.
