I already baked and filled a 5 tier book cake which was supposed to be for a birthday party this weekend. However it has been rescheduled for next weekend. My concern is I filled it with a filling made with bettercream and vanila pudding.
Have any of you frozen a cake with this filling before and was it still good? I really dont want to have to bake the cakes again.... please advice..... thanks

I think the Bettercreme is ok to be frozen. Actually when I bought it a long time ago it was frozen. It doesn't freeze all the way...it just gets a little slushy. I think you should be fine.

Make sure you wrap it well, and let it thaw out slowly..... It should be just fine.....

It will be just fineicon_smile.gif Whipped Bettercreme fzs well. As grama said, put it in the fzr, let it harden, wrap it well in plastic wrap, then into a sealed plastic bag or foil and it will be just fine. Best to take it from fz to frig the night before needing, then take it out & unwrap it to come to room temp.
