When stacking dummy cakes over real cakes, do I need to cover the bottom part of the dummy cake with something so it doesn't get in contact with the real cake? If so, what can I use to cover the bottom part?

Just use a piece of covered cardboard like it was a real cake. Same stacking rules apply. : )
