Several Questions-Difficult Cake

A Few Questions combined, for a difficult cake
Sorry guys i have multiple questions, first off, i bought the planet cake book and am gonna make the white chocolate, dark chocolate mud cake and gluten free almond cake as a three tiered cake. How long do these cakes last for?

I plan to ganache and ice all three layers (as a cube 9x9, each cake being 3inches high, this cake is for my thirtieth, i was wondering how many days i should leave in advance to make it? and how many days inbetween stages (cake, genache, icing etc)? The cakes will be separated by boards. Im not a cakemaker or professional whatsoever but do bake a lot, so looking for advice.

bake the cakes ,let cool,wrap and leave in the fridge over night,next day fill and frost the cake and leave in the fridge over night ,at this stage u can wrap the cakes tight in plastic then foil and freeze up to a month and take out of the freezer to the fridge the night before the day u plan to cover with fondant and decorate.Hope I answered your questionsicon_smile.gif)
