It's my daughters birthday she wants to bring cupcakes but one classmate has a nut allergy and one has a dairy allergy. Does anyone have a good dairy free nut free cake and frosting recipe? I'm stumped

Thanks

I only have one dairy free cupcake recipe. This is a new Zealand recipe and I am not sure how to convert it - if it even needs it... Please note I have not made this, but the other recipes in this book have turned out fab.

Dairy free strawberry cupcakes - makes 36
220g soy or olive spread, or other dairy free alternative
2 t vanilla essence
330g caster sugar
450g self raising flour
2 eggs
375ml water
200g fresh or frozen strawberries.

Heat oven to180 degrees celcius. Place spread, vanilla, sugar, flour, eggs, and water into a bowl and using electric beater mix on low for about a minute until blended. Increase speed to high and beat 4 more minutes or until mixture has thickened. Stir in chopped berries. Spoon into lined cupcake tins. Bake 12-15 minutes.

Dairy free vanilla frosting
200g soy or olive spread, or dairy free alternative
600g icing sugar
80ml soy or rice milk
2t vanilla essence
50ml vanilla soy yoghurt.

In a mixer, cream the spread for 2 min or until fluffy, gradually add icing sugar, beating at low speed until combined. turn up speed to high and beat in milk and vanilla and yoghurt. Continue to beat until the mixture is smooth and creamy. Chill slightly before use.

I assume at some stage you can color the frosting.

Let me know if you use this recipe, I would be interested in how it goes.

Good luck!
