One of my clients wants a Black Forest cake with 'flat smooth red surface with white color writing'. Anyone has any idea how to achieve it? Black Forest cake is o.k., but it usually has whipped cream/chocolate shaves on the top... I don't want to use BC on the top as now it's sooo hot outside and she doesn't want fondant/marzipan as it doesn't go with Black Forest type of cake. I made a try with red chocolate instead of whipped cream covering top of the cake and white chocolate writing, it's not bad but I'm not entirely satisfied. Thanks for your ideas!

can you do a layer of red piping gel over the whipped cream?

Not sure if this would work, but is an idea....why not make a ganache and instead of using standard chocolate, use cherry chips (you may have to add some red coloring to get a desired red). It works with white chocolate, so it just might work with the cherry chips.

Or maybe try the white chocolate ganache tinted with coloring.
