Custom Bakery Case

Hi Everyone-
I'm wondering if any of you who have a storefront had their bakery case custom made? I am currently in the process of construction and plan on having my display case built by the contractor but the health department requires I have the interior lined with NSF approved materials (which I totally understand). Can anyone lead me to a website/manufacturer of such materials? Both the inspector and architect can't help me.
Also, if you have custom trays with the holes drilled in them for placement of cupcakes, what did you use for that?

I bought used display cases with decent interiors but they had really beaten up exteriors. My contractor fixed up their facades with a couple of light oak planks. Made them appear brand new.
