Hello,

I was thinking of making a red velvet cake for my cousin and wanted to know if I could use the cream cheese icing somehow making it smooth like regular butter cream.

Any suggestions or ideas i would welcome.

There are some crusting cream cheese recipes on here that I've used before. Also my best friend makes cake and uses cream cheese icing exclusively, so you can definately do it, just make sure it's kinda thick.

You can and I do but it's not my favorite. Make sure to use a crusting cream cheese icing and don't try to put too much on at one time. If you get the layer too thick, it has a tendency to sag.

I recently made a crusting cream cheese icing that was easy to work with (and smooth) and was delicious - I used Edna De la Cruz's crusting cream cheese recipe.

1 cup butter, softened
1/2 cup shortening
16 ounces cream cheese, softened
3 1/2 pounds powdered sugar
1 tablespoon pure vanilla
1/2 teaspoon salt
