I have a 3 tiered square wedding cake to do in Oct. for 60-70 people. What size pans would you suggest using? TIA!

A 6/8/10 square combo will give you 100 servings.

A 6/10 square would give you 68.

You don't have many options...
6" = 18
7" = 24
8" = 32
74 Total

If they're saving the top tier, just go up 1" on all sizes...
7" = (freeze)
8" = 32
9" = 40
72 Total
