Taste Of Ganache Under Fondant

I'm going to be doing some topsy-turvy cakes and will ice in ganache.

Chocolate doesn't necessarily work w/ all cake/filling flavors. For those flavors, do you typically use the white chocolate ganache, and if you do, do you add any flavors to compliment the cake?

Do you have any issues with people not liking the ganache or prefering BC under the fondant?
