You cover it the same way you would cover a regular cake, minus the icing. You can use water, piping gel or crisco to attach the fondant to the cake dummy.

The only thing you'll need to do is soften the edges of the dummy, or it can tear the fondant. I usually just press the edge against a hard surface, but it depends on what material the dummy is made out of.
