Help Me... Mmf Questions 911

i just got my KA and ive made a mess> the ps didnt incorporate right so i had to take it out of bowl and startes to knead. mmf is all crumbly< breaking and def not pliable. how can i save it it??

Add more water. Put it back in the mixer and mix it on low with the dough hook. Add the water very gradually, a teaspoon at a time, letting it mix about a minute in between, until it starts to look like fondant and not like a crumbly mess.

its in a ball already just not pliable> and not too crumbly but it just breaks. ive added more shortening and put some light corn syrup.. im a hot mess rt now[/u]

Which recipe do you use? Probably can't save that batch but maybe I can help you figure out the next one icon_biggrin.gif

I ended up throwing it away. I added more shortening, light corn syrup, more ps... ended up even worse!

I'm about to try it again..

THis is the recipe I used:

16 oz of marshmallows
2lbs of ps
3tbs water
1/2 cup shortening



i microwaved my marshmallows with water. stirred it all.

i put the 1/2 cup of shortening in the mixer with the ps and put on Stir. I did add all the ps at once.. not sure if i should had. kept. the bottom didn't incorporate so i ended up taking it out and trying to knead it all. from there it went downhill. it looked good at first.. well like it could end up good but it just never got pliable.

i've looked up other recipes and i'm not sure if i was supposed to put that shortening in there. i keep reading all i need is marshmallows, water and ps... grrrr

I coat my microwave safe bowl with the shortening,add marshmallows and water. Microwave until melted. Add my flavoring, coat my KA bowl, dump in my marshmallow mixture, add the ps a half to one cup at a time on 2. Adding the ps in a little at a time allows you to test the texture to ensure it does not get too stiff or dry...HTH!

No Shortening added to the recipe...sorry..... thats why it isnt turning out.

The recipe I have doesn't use shorting IN the MMF, I just use it to coat my hands and the counter top to prevent sticking when kneading.

Hope the next batch turns out better!

I used to grease up the bowl and hook with the shortening, but now I add 1/4 cup of unsalted butter, cut into tiny cubes, instead.

When you make MMF in the KA, put the melted marshmallows and water (and clear vanilla flavoring, if you want) in the bowl first, then sift the powdered sugar in on top. If you're adding butter, sprinkle it over the sugar, then mix on low until everything is smooth and mixed and starts sticking to the bowl. If the machine starts to sound tired, turn it up one notch, but never turn it higher than 2 when you're using the dough hook.

2nd batch was a success. I followed the video below and it worked out perfectly. I did about 5 colors and didn't realize that'd be some hard work! But it's done. No shortening in the recipe this time...
