Need Cheese Cake Help

I have a recipe for sugar free cheese cake that is a favorite of my family. I make it often as my husband is diabetic and although it is reallly high in cal & fat it is low in carbs. I've always made it in a 10" pan and want to make it in a smaller pan to make a higher cake or double the recipe to make a larger cake but don't know how long to bake it. Does anyone have any suggestions for me. detective.gif

Every recipe must go through experiments. I suggest you find recipes with similar ingredients in larger pans and do it that way. Or just start baking and taking notes. That's how I do it.

If you type "tall cheesecake recipe" into Google, you will get many links to recipes and instructions for tall cheesecakes. Then you can compare your ingedients and instructions and see if there's a great difference between the two.
