whether to use fondant or gumpaste to make your flowers. Is it just personal choice or does it depend on type of flower, humidity/temp, etc. Thanks for your answers.

I believe it is a personal choice, if you want a soft flower colored with gels that is easily edible than it's fondant if you want a hard flower than it is gumpaste where you can dust them and drys vey hard so depends what your doing I guess.

In my opinion it could be personal choice, however fondant does not dry out hard and remaines somewhat pliable so it would depend on the type of flower you are making. Gumpaste does get rock hard so it would be a better choice ..there is also the 50/50 blend you can do which is 1/2 fondant and 1/2 gumpaste this would allow a bit more flexability than straight gumpaste.
