I am making my son's wedding cake and his bride wants a simple filling in the cake. I will need to bake, fill, crumb coat and freeze the cake ahead of time. I am looking for a filling that will freeze well and not mess up the cakes when they thaw. Any ideas?

I have used buttercream and whipped buttercream. What kind of cake are you making?

I am going to make a plain white cake and the bride wants a vanilla type filling. I also thought of fruit fillings and she is agreeable to that as well. I will use buttercream for the icing as none of us like fondant so something other than buttercream would be good for the filling. I am open to any ideas or suggestions. The weddinig is in mid Sept so I have a little time. Thanks.
