Caramel Filling With Mmf Cake?

I have to make this cake today. I am making a chocolate cake with caramel filling. It will be covered in MMF. I'm worried about what kind of caramel filling I could use and leave it out at room temp. and not refrigerate. I bought a jar of caramel ice cream topping thinking it would work, but I just don't know. Or should I just put the MMF covered cake in the fridge anyway? Any suggestions? Thanks!

It would be okay to leave the jar stuff out, but it'll probably be too thin on it's own.

My favorite thing to use for caramel, it's actually the ducle de leche. You can buy it in a cake from Nestle's at Walmart in the ethnic food aisle.
