I want to inject filling into a coconut mini cake. Any ideas for the filling flavour?
And does the filling have to be pudding- like if I'm injecting (and not BC)?

I use coconut cream pie filling for my coconut cake, I use the same recipe that I use for pies and it's super yummy.
It also pipes well,I've filled cupcakes with it before.

If not coconut with the coconut cake, how 'bout pineapple or lime? No, the filling doesn't have to be pudding, it can be preserves, buttercream, curd...

I did Pina Colada cupcakes a few weeks back and did coconut cream cakes filled with Pineapple curd and the combo was too die for. I don't remember the exact recipe I used but, just google pineapple curd and lots come up.
