Can anyone tell me how they made the "pleats" on this cake? I was thinking about pleating a strip the circumference of the cake and wide enough to cover the top. I'm not sure if this would work or how to keep the pleats straight.

I cut strips of fondant in equal size pieces and folded one edge under. The fold was probably 1/3 of the total width of the strip. Then I applied the strips, with the folded edge slightly overlapping the unfolded edge of the next strip using a weak gum glue. You could also use water.
