I have a small wedding cake where they would like the shiny poured ganache over it with some scroll work. I've tried to research how to do this but I can't seem to find what I'm looking for on this subject. Can poured ganache be piped on ad if so what is the best technique to do this?

Sure, once it sets and hardens you can pipe on it just as you would any other cake.
