Can I Refrigerate Fondant

Hi,
I am making my first fondant covered cake this weekend. I was hoping to get it all done on Saturday for a Sunday party. Is it ok to store it in the refrigerator or is better to store on the counter? It is supposed to be fairly warm this weekend high 80 - low 90s and humid.

Ideally fondant should be left out of the fridge but if you are using a perishable filling then it needs to be in the fridge. When you take the cake out of the fridge there will be condensation on the fondant it is important not to touch the cake until the condensation has dried up. You can also reduce the amount of condensation by keeping your cake in a sealed container until it comes up to room temp.
