If this is already common knowledge, please disregard, but in my search for a white velvet cake recipe i fell upon the website "real baking with rose .com" (take out the spaces) and i feel like it's the holy grail of caking! It's a source of invaluable info from the writer of the cake bible, and in her video on the white velvet cake, she explains how over baking and under baking can affect a cake. i can't wait to explore more and hope this is as much help to others that i think it will be to me! Enjoy!

I also discovered her site, and purchased her
cake Bible. It's great, I've switched to her method of mixing the batter and it's much easier and you can't over mix the batter. Her yellow butter cake is delicious and I use it all the time. I even tried making the bird cage out of spun sugar from her book and it came out looking great.Great book and informative site.
