i am also looking for a good chocolate cake and icing....i am starting my own cake business and i have already experimented with chocolate cakes.... and the cakes i thought were winners ( very moist and not too heavy) ended up being so soft it broke when i transfered it from the cooling rack to the cake plate or it was too brownishy in density so i wantit moist but also want to be able to do a tiered cake with it if needed.
same for the icing...i would like a good chocolateicing that is good for decorating but very chocolatey....
i did try the hershey perfectly choclate cake and icing and people thought it was too dense....!!! please give me any ideas!!!!!! i really need them i've made 4 different ones so far!
