Help - Cakes Shrinking In At Sides Of Cake Tin & Sinking

Hi, For some reason my cakes are shrinking back from the cake tin by quite a bit (not even straight, comes in more at the top) and they collapse quite a bit . I've tried Delia and Nigela and both the same. Maybe I'm mixing them in Kitchenaid too much (all in one recipe). They taste ok but I'm having to do lots of trimming. Also, best recipe for a 10" sponge for decorating (British version please)??? icon_sad.gif

I'm not sure about the sinking issue, but my cakes shrink that way if I leave them in the pan for too long. Now I get them out within the first couple of minutes...Could that be part of the problem?
