Carving A Cake

I am doing a 3 layer , 2 tier cake.

The bottom is 9,10,10 and the top is 7,8,8

Want to carve them to get the tapered look and do i go ahead and put the icing in between the layers, chill and then carve?

My 1st so I'd appreciate any help to make it easier on myself1

If you are just using icing as a filling then yes I would go ahead and fill, stack and carve.

If you where using a filling that needed a dam I'd say carve then fill and restack.

Bumping another question off of the original,
using ganache as a filling, would you need a dam if you were carving a cake?

Nope, if your ganache is thick enough it really shouldn't ooze out.
